Warm Haloumi Salad
Make this for lunch today! Warm gooey Haloumi with roast Mediterranean veggies and fresh citrus dressed salad. Warm molten goodness on your tongue. Who doesn’t love Haloumi?
Bake small cubes sweet potato with whole garlic cloves, olive oil, sea salt, pepper, sprinkle of ground cumin & sumac (or paprika) and fresh thyme sprigs first and after 15 mins add Swiss brown mushrooms, large cubes zucchini, and thick slices of Haloumi.
In approximately another 10 mins, when all veggies are soft and Haloumi is bronzed, remove from oven and serve with fresh baby spinach leaves, halved cherry tomatoes, Kalamata olives and lashings of fresh squeezed lemon juice.
