Vege Stack with Coconut Ginger Sauce

I found the recipe for this sauce years ago, it is still a favourite and the star in this dish, the flavour and creamy texture goes well with salmon or any fish, you could also use tofu marinated in garlic and tamari
Also a great dipping sauce for rice paper rolls
You are going to love it!

For the sauce you will need
1 shallot or half a small onion finely diced
1tbls fresh grated ginger
1 cup coconut milk
2 tbls tamari or soy sauce
2 tbls coconut sugar
Zest of 1 lime plus a squeeze of the juice
Chopped basil or coriander

Heat a tbls coconut oil in a small saucepan, add the shallot and ginger, sauté till soft. Add the coconut milk heat till almost boiling then add the rest off the ingredients
Reduce heat and simmer for 10 minutes
Serve with grilled or roasted vegetables of choice , sweet potato, eggplant, zucchini, pumpkin and capsicum are used here
