3/4 cup crunchy organic peanut butter
1 small onion chopped
2 garlic cloves chopped
1 small knob ginger chopped
2 tsp curry powder (optional – depends on what you are pairing your satay sauce with. Curry powder can increase Thai/Indian/Asian flavours)
1 can coconut milk
1/2 fresh lime juice
1 chilli chopped (optional)
2-3 tbsp tamari (or soy sauce)

Blend all ingredients in food processor or high powered blender. Add water if consistency is too thick).

Great to smother over grilled marinated tofu, vege skewers, or dip for spring rolls. Lasts for 7-10 days in the fridge.
