Raw Zucchini ‘Pasta’ with Sun-Dried Tomato Tapenade & Caponata

Fine grate 2 large zucchinis (or 1 zucchini per person)
Blend 1/2 cup sun-dried tomato with 1 small garlic clove, handful fresh basil leaves, grind of black pepper & enough olive oil to make a paste (depends on how much oil your sun-dried tomatoes absorbed in jar).
Mix through zucchini 
Serve with our baked caponata on side (scroll down on our page for recipe)
