Raw Zucchini Pasta with Cashew Pesto

Need to eat lightly today after feasting yesterday? Try this incredibly delicious RAW ZUCCHINI ‘PASTA’ with BASIL CASHEW PESTO. Loaded with nutrients, and the raw food will assist digestion of yesterday’s indulgences.

ZUCCHINI ‘PASTA’
4 zucchinis (serves 4)
use a spiraliser, grater or mandolin to create long strands of zucchini

BASIL CASHEW PESTO
1/2 cup raw cashews (soak for at least 1hr if possible)
1 cup fresh basil leaves
2 cloves garlic
1/4 cup extra virgin olive oil
1/2 – 1 fresh lemon juice
1 tsp mustard
salt and pepper (to taste)
Blend in high-powered blender until smooth and creamy

Mix with zucchini, garnish with tomato and red onion and bless with love
