Pumpkin & Kale Spelt Roll

Roast 3 cups pumpkin, then whilst hot mash with bunch chopped kale (heat of pumpkin will wilt the kale). Cool the mixture then mix in 1/2 cup quark (can use ricotta). Season with salt, pepper, paprika, cinnamon and nutmeg (to taste).

Using spelt puff pastry (purchase at healthfood store) roll out 1 sheet of pastry, divide into 2 then fill each centre in one long line. Seal pastry from each side. Bake in 200 degree oven for 25 minutes or until browned. Half each long roll to make 4 rolls. Serves 2 for a meal or 4 for a snack.
