Orange Almond Cake (gluten free)

This cake is so moist and bursting with orangey goodness, a real treat for citrus fans

Ingredients
2 oranges
3 eggs
1 cup coconut sugar
3 cups almond meal
1 tsp gluten free baking powder

Orange Syrup
1 large orange
1 cup coconut sugar

Wash the oranges, place in a saucepan cover with water, bring to
low boil and cook for 2 hrs (do not skip this part or the cake will be bitter) remove from water and let cool.
Preheat oven to 170c. Grease a 22cm springform tin and line with baking paper
Roughly chop the oranges leaving skin on removing any pips then blend in a processor till smooth
In a bowl whisk the eggs and sugar till pale and creamy, gently fold in the orange puree, baking powder and almond meal till combined.
Fill prepared tin with mixture and bake for approximately 1 hour, check if cake becomes too brown cover with baking paper, it’s ready when a skewer inserted comes out clean

As cake cools slightly make the syrup by removing skin from orange with a peeler, no pith, slice finely and add to a saucepan on low heat with the juice of that orange and the sugar
Simmer gently till the sugar dissolves and thickens slightly
Remove warm cake from tin, pearce all over with a skewer and pour syrup over entire cake
Garnish with chopped raw pistachios
