Happy New Year! It’s a pancake kind of day!
GLUTEN-FREE CAROB PANCAKES with BERRY COMPOTE
2 cups gluten free flour (I used Banana flour which can only currently be ordered online so use any store-bought gluten free flour or for non-gluten free people go for wholemeal spelt flour)
1/2 cup carob powder
3 tbsp shredded coconut
2 tbsp flaxseeds
1 egg (vegans use flaxseed gel)
2 cups milk (I used a quality soy)
Whisk ingredients together, cook in coconut oil.
For the compote, mix berries in a saucepan on low heat until just falling apart. Sweeten with maple syrup. Serve and garnish with pistachios or nuts of choice.
