FRESH BASIL PESTO

With all the beautiful rain our home grown herbs are growing beautifully! If you don’t grow your own, be sure to grab some basil growing at our New Farm yoga studio and make this yummy pesto which can accompany yesterday’s post for lentil bolognese or on a Caprese salad.

In motar grind in the following ingredients in the following order or blend altogether in food processor, adding oil in last.

2 handfuls fresh basil leaves
1/4 cup pine nuts or any other nuts in your pantry (option to lightly dry toast nuts in pan to release oils and increase flavours)
1 small garlic clove
Juice of 1/2-1 lemon
Zest of 1 lemon
Olive oil – enough to moisten pesto to your preferred consistency
Salt & Pepper (to taste)
Non-vegans grate in parmesan or pecorino cheese to add savory element.
