Crunchy Green Toasted Quinoa & Sesame Salad
This is really a detox salad full of alkalising greens, fibre and protein that also tastes delicious! Serve it on its own or as a side, get your dose daily 😉
Ingredients
11/2 cups quinoa
1/2 bunch of kale finely shredded
5 spring onions finely sliced – reserve some for garnish
150g snow peas sliced
1 Lebanese cucumber diced
1 avocado diced
1 diced small green capsicum
1/2 cup roasted cashews chopped
Dressing
Juice of 1 orange
1 tbsp sesame oil
3 tbsp vegetable oil
1 tbls tamari
1 tbls honey
2 tbsp toasted sesame seeds plus extra for garnish
Place quinoa in a saucepan on medium heat and toast for a few minutes, keep stirring quinoa will pop and start to brown slightly, now add 3 cups of water and simmer till all liquid is absorbed about 10-15 mins
While that is cooking put all your dressing ingredients in a jar and shake well
When quinoa is ready cool and toss through nuts and prepared greens, add salad dressing when ready to serve
Sprinkle with extra spring onion and sesame seeds
