Breakfast Parfait
A wonderful, healthy superfood breakfast treat for your family. A great weekend recipe when you can spend a few minutes preparing each nourishing layer.
4 layers:
Bircher Museli
Blackberry Chia
Date Caramel
Cinnamon Coconut Yoghurt
Recipe for 4 people
Layer 1
Soak 1 cup oats in fresh squeeze lemon, lime & orange juice (enough to just cover oats) with 1 grated apple and a handful of dried fruit & nuts. 1/4 fill jar or glass and press. Leave in fridge to prepare layer 2.
Layer 2
Blend 4 Tbsp chia seeds with 1/2 cup blackberries and 3/4 cup coconut milk. Press into jar to over half way. Set in fridge to prepare layer 3.
Layer 3
Blend 10 medjool dates with 3/4 cup almond milk and 1 tsp vanilla extract. Fill jar almost to the top.
Layer 4
Mix 2 tsp cinnamon with 4 tbsp coconut yoghurt. Dollop on top and garnish with fresh blackberries and a sprig of mint.
*use any milk of choice and also can soak oats in milk or water
