Blueberry Spelt Pancakes


Drool factor! Pancakes make a perfect Sunday brunch or even a healthy shared dessert. Made with fresh blueberries, a natural jam oozes from the centre 😋
 
Ingredients
2 cups spelt flour
2 cups plant milk
1 chia egg (1 tbsp chia seeds mixed 3 tbsp water and left to stand for 2 minutes)
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
1-2 teaspoon coconut oil (for frying)
Punnet blueberries
Maple syrup (optional)
 
Method
Whisk flour, milk, chia egg, cinnamon & vanilla in a bowl to make a smooth batter.
In a medium-hot frypan, coat base with coconut oil and using a ladle, spoon in one ladle full of batter to make a pancake shape.
Add 5 (or more) blueberries to pancake and wait for bubbles to appear on surface.
Flip and cook through on other side.
Repeat until batter is used up.
Note: pancakes cook quickly so don’t walk away!
 
Serve with additional blueberries and maple syrup.
