Banana Bread made with Banana Flour

Have you heard of banana flour? It’s a gluten free flour that cooks like a dream in baked goods. Made by Natural Evolution Foods from North Queensland by using green bananas, this super healthy flour is starch resistant. This means you will improve gut health and feel fuller for longer, leading to weight management. Plus there is no bloating after eating banana flour! INGREDIENTS
100 grams coconut sugar
3 ripe bananas
150g coconut oil
220 grams Banana Flour
2 teaspoon organic bi carb soda
100 grams almond milk or milk of choice
2 teaspoon cinnamon
3 large eggs
10 pitted dates
10 walnuts, crushed (for top)

METHOD
Preheat oven to 180 degrees Celsius
In food processor combine all ingredients well.
Pour mixture into a lined bread tin.
Thickly spread walnuts & gently press into the top of the mixture.
Bake in oven for approx. 40 minutes or until mixture doesn’t stick to knife
Remove from oven & cool slightly before slicing.
Serve with favourite toppings – I love coconut yoghurt!
Keep in fridge and try toasting bread if you have leftovers after a couple of days.
