Raw Cherry Ripe Tart

RAW CHERRY RIPE TART

Merry Christmas everyone! I made this healthy, delicious, raw, nutrient packed dessert last night ready for Christmas Day. You still have time to make this tart for tonight’s dessert! This tart is loaded with healthy fats that will actually promote weight loss through supporting your organs to function optimally, so go ahead and enjoy yourself! Love Carrie

The first pic shows the 4 stages of the tart. The second pic is how the tart looks when sliced. Can we hear a YUM?!!

Stage 1 – Base
10 Medjool date
11/2 cups soaked raw almonds
1 tsp cinammon
Blend or grind in food processor or high powered blender then press into one large tart case or 4 small tartlet cases. Put in freezer until ready for next stage

Stage 2 – Cherry/Coconut Filling
1 cup shredded coconut
1 cup fresh cherries
2 tbsp maple syrup (taste and go sweeter if you prefer)
1/4 cup coconut milk (could be more or less – bring mixture together in a moist but not too wet clump so if cherries are very juicy adjust as needed)
Mix together and press into tart case. Put in freezer until ready for next stage

Stage 3 – Raw Choc Avo Mousse
2 ripe avocados
2 tbsp maple syrup
1/3 cup of raw cacao powder (can use regular cocoa powder) – more if you want to boost the chocolate flavour
2 tbsp virgin coconut oil
1 tsp vanilla extract
Blend in food processor or high powered blender, then smooth and level mousse on top.

Stage 4 – Cacao Dusting
2-3 tbsp raw cacao powder
Dust on top of tart with a small sieve
Freeze until ready to eat.

This tart can remain in the freezer if you have left-overs and is easy to slice straight from frozen. It will only need a few minutes to soften ready to indulge!
