Mediterranean Roast Vegetable Brown Rice & Quinoa Pilaff
Roast veggies of choice such as mushroom, zucchini, eggplant, capsicum, sweet potato plus onion and garlic coated in olive oil with dried oregano, thyme and seasoning.
Cook 1 cup brown rice with 1 cup quinoa.
Cut veggies into cubes and mix through brown rice & quinoa. Make a special dressing of Apple cider vinegar, chilli, flaked almonds & Dijon mustard to mix through. Add fresh herbs, chopped spring onion and spinach leaves. Serve warm or cold.
