Garlic Kale & Mushrooms

Simplicity at it’s best! Sunday brunch favourites provide a healthy dose of vitamin B1,2, 6 & 12, dietary fiber, calcium, riboflavin, biotin, potassium, vitamin E, vitamin C, iron, magnesium, omega-3 fatty acids, chlorophyll, phosphorus, protein, folate, and niacin. Wow that’s nutrient packed for 4 simple ingredients!

Olive oil for sautéing 
Portobello Mushrooms (1 per person)
Shredded Kale (handful per person)
1 garlic clove per person chopped finely 

Heat oil gently, place mushrooms in and cook through on both sides then toss in garlic and kale. The whole dish takes minutes. Serve with your favourite breakfast sides such as poached eggs and crusty sourdough
