Christmas is coming which means it’s cherry season here in Australia! This is a high-nutrient, superfood, vegan dessert that has an incredible flavour and luscious texture on your palate. Think Cherry Ripe – cherries, coconut and chocolate. Ummm…..YES!
Chia Layer
In blender combine 1/4 cup chia seeds with 1 cup drinking or canned coconut milk. Set in fridge for at least 20 minutes
Cherry/Coconut Layer
Dice a pun net of cherries and mix with a cup of shredded coconut
Chocolate/Coconut Layer
Mix 3 tbsp raw cacao powder with 1 cup coconut yoghurt and 1 tbsp maple syrup (go sweeter if you prefer)
Garnish
Fresh halved cherries and a splash of maple syrup
Serves 2
